there is a worse fate than breaking a string on stage. one of my teles landed at the bottom of the stairs going onto the stage when the freaking tuner decided to give up the ghost on the intro to the first song of the set. and yes the backup guitar WAS out of tune. It followed and I ended up playing the singers guitar. It was a bit of a mess and didn't leave me any to happy. As far as the string change goes, about 3 mins on my jap tele(floating bridge) and about a minute or less on my old tele elite(fixed bridge) the solution: switch to the heaviest guage strings you can handle and then go one stage heavier. Can't remember the last time I broke one and I used to break at least one or two every time we had band practice.

I think if I broke a string onstage, I'd just play the rest of the show without it. I like challenges.

doesn't work so well with a floating bridge earth. Break one string and it pulls everything else out of tune. hence the fact i'm willing to give up my ability to induce ear grinding vibrato feedback out of the trem for the tuning stability a couple wood blocks lends

Meh, I dunno. I broke a string on my acoustic once, so I just tuned the other five differently and it sounded pretty great. Couldn't you do the same even with a floating trem?
